Nana’s Zucchini Bread

Nana’s Zucchini Bread

Preheat oven to 350 F

Mix together:
3 eggs, beaten light and foamy
1 c. oil
2 cups sugar
2 cups grated zucchini (don’t peel)
3 tsp. cinnamon

Sift together and add:
1 tsp. soda
1 tsp. salt
½ tsp baking powder
3 cups flour

Add:
½ cup chopped nuts (optional)

Blend well. Bake in 2 loaf pans for 1 hr.
Cupcakes: Bake ½ hr Yield ~ 34-34 cupcakes
