Sweet Potato Fries

Sweet Potato Fries

1 egg beaten
1 tblsp water
1/3 cup dry bread crumbs
2 tblsp grated parmesan cheese
¼ tsp cayenne pepper (I used chili powder)
¼ tsp pepper
1 large sweet potato
2 tsp olive oil
Dash salt
In shallow bowl whisk egg and water. In plastic bag combine bread and other dry ingredients. Cut sweet potato into ¼” strips, add to egg mixture a few at a time then place in bag and shake to coat fries. Arrange potato strips in single layer in baking sheet coated with non-stick cooking spray. Drizzle with oil. Bake at 450 degrees for 25-30 minutes, turning fries occasionally.
For the dip I tried several different things that were all good; Thousand Island dressing, catsup, tarter sauce that I had already made for the shrimp that we had with the fries, even orange marmalade was delicious.
I cut the large long sweet potato into three equal pieces, crosswise, so that the fries would end up with a uniform length.
