Grandpa Walton’s Rollups

3 eggs
1 ¾ cups milk
1 tsp. vanilla
1 ½ cups flower
1 tablespoon sugar
1 ½ tsp. salt
3 tablespoons oil
sugar for sprinkling
Mix all the above ingredients together. Set aside for
a few minutes. The batter will thicken. Spray a small
frying or crepe pan with non-stick cooking spray.
Over medium heat, pour 1/3 cup of batter into pan
making sure batter is evenly distributed over entire
pan. Flip over crepe when lightly browned and cook
other side briefly. Remove crepe from pan and lightly
spread with butter. Sprinkle sugar over crepe and
roll up.
