Delmar’s Spare Rib Rub

¾ cup
brown sugar 1 Tbs. Paprika
½ tsp. garlic powder
2 Tbs. chili powder
½ tsp. salt
½ tsp. pepper
2 tsp. dry mustard
1Tbs dried tomato (pulverize with fingers)
Mix all ingredients in bowl, set aside.
This is enough rub for two slabs of spare ribs. Have
meat market
Cut slabs lengthwise, makes ribs shorter, and cooks
better.
Lay out ribs, make sure they are dry, rub with
cooking oil, spread and rub on dry rub.
Wrap ribs in plastic wrap and let marinate in
refrigerator for at least 12 hours. Unwrap ribs,
place in large pans with rack, brown
at 450 degrees uncovered.
When browned, mix about 1 Tbs. liquid smoke in 2 cups
water and pour in bottom of pan, cover with aluminum
foil or lid, bake at 250 degrees for about 5 hours.
These are good with or with out barbeque sauce, but
can be applied after ribs are done.
