White Chili

White Chili

1 lb. great northern beans
6 cups chicken broth
2 cloves garlic, minced
2 medium onions, chopped
1 T. oil
2 4 oz. cans diced green chili
2 t. ground cumin
1 ½ t. oregano
1/4 t. ground cloves
1/4 t. cayenne pepper
4 c. diced cooked chicken
3 c. grated Monterey jack cheese (topping)
Salsa (topping)
Sour cream (topping)
Combine beans, broth, garlic and half the onions in large soup pot. Bring to boil. Reduce heat. Simmer until beans are soft (3 hours or more) adding more broth if necessary. In skillet, sauté remaining onions in oil until tender. Add in chili and seasonings and mix thoroughly. Add to bean mixture. Add chicken and simmer 1 hour. Serve in individual bowls topped with cheese, salsa & sour cream. Serves 8-10.

Delmar’s Green Pork Chili

Delmar’s Green Pork Chili
From: Delmar and Barb Schroeder
1 to 1 ½ lb. lean pork – cut into ½ inch cubes 2 Tbs. Flour
2 14 oz cans diced tomatoes 2 4 oz cans chopped green chili’s
1 med. onion chopped 2 Tbs. Cumin powder
1 teaspoon cayenne or chili powder 1 Tbs. Soy sauce
1 Tbs. Garlic powder 2 cups water
In a lightly oiled pan, brown pork stirring in 2 Tbs. Flour. Stir over medium heat until done. (I sprinkle a little cumin over the meat with the flour)
Drain liquid from tomatoes into crock pot, dice tomatoes fine and add to crock pot.
Add remaining ingredients, including meat.
Cover and bring to boil, boil for an hour, stir, reduce heat to low, simmer for 4 to 6 hours, stir gently every
2 hours.
With this recipe you can adjust the way you like it, if it gets too hot, add a little sugar. I have a hand held
Blender, so I run it in it for just a little bit, knocks down some of the chunks and seems to blend the taste
better.

1 - 14.5 oz can kidney beans (with liquid)
1 - 14.5 oz can pinto beans (with liquid)
1/2 cup diced onion
1/4 cup diced green chilies
1/4 cup diced celery
2 med tomatoes, chopped
1 teaspoon cumin powder
2 tablespoons chili powder
1 teaspoon black pepper
2 teaspoons salt
1 cup water

into pea-size pieces.
In a large pot, combine all ingredients and bring to a simmer over a low

beef browned
1 Large can Bush’s Vegetarian Beans
1 Med onion diced
1 Tall can tomato sauce
1 Can Tomato’s with onion and celery 14 0z
2 table spoon chili powder
1 tsp Cumin powder
1 tsp hot sauce
1 table spoon sugar
Water to clean out old ketchup bottle(s)
Brown ground beef, add all other ingredients, heat
up, turn down heat and simmer for at least 30
minutes.

1 tablespoon Basil
1 small diced onion
1 7 oz can chopped green chills
1 14.5 oz can Northern or White beans
2 " " cans chicken broth
2 " " cans diced tomatoes
1clove garlic (crushed)
3 tablespoons sugar
1 teaspoon Cumin
In large pot, crumble and brown sausage, sprinkle with a little
Basil and Cumin while browning. Add remaining ingredients, bring
to boil for about 5 minutes, simmer for another 2 hrs. This is also
a good time to rinse out nearly empty catsup bottles and add to
Chili.
